I found these at my fav local grocery store (Central Market) last week. Ruby Jewel is a small business in the northwest that started out selling their ice cream sandwiches at local Farmer’s Markets. Each ice cream sandwich is totally handmade. I munched on the Double Chocolate cookie with Peanut Butter ice cream, and it was totally amazing. They have a Lemon cookie with Honey Lavender ice cream flavor that also looks fabulous, along with 4 other flavors.
Each sandwich is around $3 and totally worth it. Unfortunately they’re only available in select stores in Washington and Oregon and one store in California. Although if you’re serious about your handmade ice cream sandwiches you can order a case of 16 sandwiches through their website.

Hey! It doesn’t matter how homemade they are, or how affordable they are or even how yummy they are!…. They do NOT sound like they are “Adis approved”…. especially the ones with double chocolate cookies and peanut butter ice cream
