Chicken and White Bean Chili

INGREDIENTS

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, crushed
  • 1/3 diced jalapeno pepper
  • 1 chopped mild green chile pepper
  • 2 teaspoons ground cumin (cumin seed also works)
  • 1 teaspoon dried oregano
  • 1/8 teaspoon ground cayenne pepper
  • 1/2 teaspoon salt
  • 2 (14.5 ounce) cans chicken broth
  • 3 cups chopped cooked chicken breast
  • 2 (15 ounce) cans, drained, cannelli (white kidney) beans
  • 1 cup shredded Monterey Jack cheese
  • sour cream (optional)

DIRECTIONS

  1. Heat the oil in a large saucepan over medium-low heat. Slowly cook and stir the onion until tender. Mix in the garlic, jalapeno, green chile pepper, cumin, oregano, cayenne and salt. Continue to cook and stir the mixture until tender, about 3 minutes. Mix in the chicken broth, chicken and white beans. Simmer 15 minutes, stirring occasionally.
  2. Remove the mixture from heat. Slowly stir in the cheese until melted. Add a dollop of sour cream. Serve warm.

I found a similiar recipe on allrecipes.com and altered it a bit to make this one. Its super tasty, easy to make and pretty darn healthy. Plus Devon likes it, and he was skeptical about it tasting good from the get go.

Soul Kitchen by Poppy Z. Brite

I just finished Soul Kitchen by my favorite author: Poppy Z. Brite. Its her 3rd in a series of books about a male 2 some of chefs who have created a trend setting restaurant in New Orleans (pre-katrina). In this book, the mastermind chef is asked to help create a menu for a new restaurant set in one of the cities floating casinos. I loved this book, as I have the 3 other books in this series (Liquor, and Prime), but i dont think its necessary to have read the 2 previous books to really enjoy the 3rd. Poppy Z. Brite is really stretching out from her roots as a horror homo-erotic writer, and its a really wonderful change. It is definately an easy to read, comforting kind of literature. I’m a huge fan.

The novel was completed, Brite notes, the night before Hurricane Katrina hit New Orleans, the city where she was born and now lives with her chef husband. An open-ended conclusion hints at another installment to come.

Day 29.

Today is day 29 of Devon working without a day off. Most of those 29 days have been 12 hour work days. As of tomorrow, he is off for 4 weeks.  Its going to be so awesome. I finally have my man back. Well almost…. He’s still at work right now… But soon I will. :)

A Yawning Fifi

Fifi has a plump pink tongue, a massive dewlap and the sharpest little teeth ever.

I snapped this amazingly adorable picture of Fifi this morning in my car. We got to her vet appointment early and so I let her out of her cage to sun herself on the dashboard. She got super comfy and and sleepy apparently andended up yawning while I had my camera out.

Cutest picture ever aside, mostly good news from the vet. We took her in for an x-ray because she passed another rock this week along with a peanut shell, and he tummy has been extra bulgy recently, so we wanted to see if there was anything else bad in her tummy. The x-ray only showed large fat reserves. I’ve always read that you can’t over feed an iguana, but Fifi has shown that you can. Apparently winter squashes are the most fattening part of her diet.

We’ve been advised to increase her percentage of greens and make her exercize more… You try telling that to a super lazy iguana. Devon suggested getting her a miniature treadmill.

So yeah. We officially have an iguana with the world’s rarest iguana medical problems. She’s 3 legged, has heart disease and now she’s overweight. She deserves a medal. :)

Nifty Ice Cube Trays

Coolest ice cubes ever.

So call me a freak, but I get a kick out of strangely shaped ice cubes. I found this rubber tray that makes heart shaped ice at the Ikea near Boston for only $1.99. They also have all sorts of other neat shapes like stars, puzzle pieces and arrows. They make super snazzy looking mojitos.
